Our sustainability team consists of Szymon Niski our Chief Engineer who knows the building intimitley since beginning here at the opening of the hotel in 2001. Our Deputy General Manager & HR manager, Fiachra & Shauna make up the rest of the committee with input from Chef Stephen Maguire on issues related to purchasing practices, menu engineering, and farm-to-table initatives.
